Wahoo’s is a fast food restaurant that serves a combination of Baja Coast and Brazilian foods. The following was emailed by Chris Lee from Wahoo's Fish Taco on 6/20/08:

Q: What menu items contain gluten?
A: To our knowledge, here is a list of our menu items that are either gluten-free or containing gluten:

  1. All fresh "raw" ingredients (veggies, salsa, guac, etc.) = gluten-free
  2. Meats = gluten-free, *please be aware of preparation. Blackened/Cajun prepared may contain gluten and teriyaki style may also contain gluten. Charbroiled and grilled prepared should be fine to order. See below information on Cajun and Soy Sauce. Chicken has trace amounts of corn gluten.
  3. corn tortillas = gluten-free
  4. Rice = gluten-free
  5. Black Beans = gluten-free
  6. sandwich bread (flour) = contains gluten
  7. Salad dressing **except oil and vinegar = gluten-free
  8. Cajun Beans = the Cajun spices in the beans may contain traces of gluten
  9. onion rings = contain gluten
  10. soy/teriyaki sauce = has trace amounts of gluten. *Per our vendor, Kikkoman soy sauce, the amount of gluten is less than what can be measured, so if you know you are sensitive to soy sauce please be aware that some of our meats are marinated in soy sauce as indicated on menu description.
  11. flour tortillas = contains gluten
  12. French fries = zero (0) gluten. zero (0) casein.
    13. Enchilada Sauce (Red or Green): gluten-free

* For applicable menu items, we use only one fryer.
** All Blackened Items Contain trace amounts of gluten from Cajun Spice Blend.

"I went to Wahoo's in Mission Valley & ordered the Wahoo Salad w/o chips. I asked what kind of vinegar they use in their oil and vinegar dressing, and the man showed me their malted vinegar, so do be careful. I eat it w/o dressing with the salsa & avocado and it is just fine. I also wonder about their Ranch Dressing because I had a reaction to it. I react to distilled vinegar and that is probably what is in it."

RJ's note: Malt vinegar is not gluten free. Distilled vinegar is gluten free, but some people are sensitive to it.
