Rubio's website includes Allergen information that lists menu items containing the top 8 allergens (wheat is one), as well as a brief list of component items that contain gluten.
At the bottom of the charts it states: "Due to the chance of cross contamination when preparing our menu items, it is not possible for Rubio's to guarantee any meal completely free of these allergens and food products listed."
The following warning was emailed in August 2004 from Erin Alden, a Rubio's Guest Rep. in 2004, but it is probably still relevant:
"As part of preparation, both our rice and chips are cooked in fryers that may be used to cook breaded fish, churros (wheat product), Zangos (wheat product) and Taquitos (wheat product). Additionally, our flat grills used to heat flour tortillas (possibly with cheese), are also used to heat corn tortillas (possibly with cheese), vegetables and lobster/shrimp products. Another factor to be aware of is that our marinade for our chicken and beef products also contain wheat derivatives and are cooked on the same char grill as our grilled fish."

"Just a note about Rubios. Cross contamination is an issue there. The rice is fried in the same oil as flour containing items. I got sick there several times before realizing this. Perhaps this was peculiar to the one we ate at, but I would be sure to check." Amy t Listserve, 10/07
