be considered as a starting off place
for choosing items. You must take the responsibility of being vigilant
by always reconfirming the GF status of a menu item and addressing
cross-contamination issues each and every time.
Chevy's restaurants
offer Mexican food with a festive family atmosphere. The following
notes and menu items listings were emailed 8/18/08 by a Chevy's representative.
"Chevys products feature ingredients which may contain wheat flour and/or gluten. If your condition is life threatening then it may be in your best interest to avoid our restaurant due to the possible, however extremely unlikely, event that residue from contraindicated products may come in contact with those considered 'safe.'
I am not a dietitian and therefore cannot tell you what you can or cannot eat. It would be a good idea to review this information with a certified dietitian and/or your doctor before dining. Unfortunately we must make changes to our menu frequently; therefore some of this information may be outdated. Also it would be a good idea to speak to a manager and inform him or her of your allergy before ordering.

Because our menu items and methods of preparation may vary from state to state, we cannot guarantee this information, however we are fairly confident that this information is accurate. Always alert your server and the restaurant manager of your allergy/intolerance.
Several of our grilled items are marinated in a sauce (Agua Negra) that contains soy sauce as an ingredient, so technically these items are not gluten-free. This will explain why many of the grilled meats are not gluten-free. When in doubt, ask your server or the manager if the item is marinated in Agua Negra. You may request that corn tortillas not be put into the fryer as this may cause cross-contamination from the flour products that are fried in the same oil. Any items that are fried or cooked on the grill are subject to potential cross-contamination from flour tortillas, etc."

" At our local Chevy's they have a machine for making fresh
tortillas, clearly visible from anywhere you sit
in the room. Though I've never asked, I think its pretty safe to assume they
make
both flour and corn tortillas on the same machine. If you decide to
eat at Chevy's in your area, I would call and clarify the origin
of their tortillas or stay away from them completely."

" Our local Chevy's has that same big machine, right in the middle
of the dining room, and they always try
to give us the table right next to it. But the Chevy's locations we have been
to (about
4
of them) do not make any corn products
on
it, just wheat. They buy their corn tortillas from another company because
the technique and cooking times are different - or at least
that's
what their corporate office tells me."
